It’s time for another update on my intermittent fasting journey! Intermittent fasting has totally changed my life! What has started as a weight loss journey has transformed into an ongoing lifestyle. My reasons to do intermittent fasting go beyond weight loss, it has evolved into simply being a better, healthier person!
Intermittent Fasting Results:
Over the 5 months, I lost about 8 lbs…with minimal exercise! I know it is quite small compared to some other’s, but I am totally happy with the progress I’ve made! Healthy weight loss takes time. There’s no one size fit all approach to lose weight and I went for slow and steady for the win. It is super motivating to fit into some of my old clothes again! I know I am still not there yet, but closer and closer! My initial goal was to lose 8 lbs in 3 months. It actually took me 5 months to get to 110 lbs.
My Intermittent Fasting Next Goal:
is to bring my high cholesterol down and lose another 5 lbs. There’s a period of time when I hit a plateau. I was so surprised that I lost 1 lbs after 2 week’s vacation! I think the change of eating window definitely helped. For IF beginners, I recommend 16/8 intermittent fasting method. It’s really easy to keep up with, quite flexible, and most importantly, it’s not depriving at all!
Sample Food Recipes:
My go-to mid-day meal is Avocado Toast With one Fried Egg, Cheese. This is a healthy easy to make meal that will keep me full till the last meal of the day. I shared the recipe in this post just in case you need to know how I make it. Another meal that I really like is the healthy version of Sichuan Dandan noodle. Soba noodles offer a lower-carb alternative to traditional wheat noodles.Dan dan Noodles (担担面, dan dan mian) is one of the most famous Sichuan foods that we usually made at home in no time. The freshly boiled noodles are served in a savory, spicy sauce topped with crispy pork and some peanut flakes.
How to make it:
Ingredients:
1/4 cup avocado oil
1 small garlic clove, finely minced (optional)
2 1/2 tablespoons soy sauce
1 1/2 tablespoons Chinese black vinegar
1 tablespoon sugar
1 teaspoon Asian sesame oil
1 teaspoon Asian Sichuan pepper corn oil
1 teaspoon chili oil
1 tablespoon sesame paste
1 teaspoon green onions
1/4 cup cooked crispy ground pork (optional)
2 cup leafy vegetable of your choice
1 bundle of soba noodles
Step 1 – Make chili oilChili oil (辣椒油) is a big staple of Sichuan cuisine. It is often used as a condiment for dumpling, noodle and cold dishes. It’s also very easy to make at home.In a small sauce pan, heat avocado oil over medium hi heat until very hot. Turn off the heat, let sit for 20 seconds. Meanwhile, pour 2 tablespoon of red chili pepper flakes into a bowl, pour the hot oil into the bowl, stir. Your chili oil is ready!
Step 2 – Cook the noodles and vegetablesIn a pot of boiling water, cook the noodles for about 2 or 3 minutes. Soba noodles is very quick to cook so make sure don’t overcook it. Drain and put in a bowl.
Step 3 – Make noodle dressing —Mix garlic, soy sauce, vinegar, sugar, sesame oil, Sichuan pepper corn oil (optional), chili oil and sesame paste in a small bowl and mix them really well. You can also add some water to loose up the sesame paste. Pour over the noodles and garnish with green onions and ground pork (optional). Serve it hot!
